I did it, I finally made a vegan omelette that taste like the real thing, but made with tomatoes! This is when I ensure you that persistence is the key to succeed, because of all the helpful feedback I received a few weeks ago, I was able to incorporate less and better ingredients to finally create the perfect eggless omelette.
Since I also deal with a soy allergy, nut allergy, and a chickpea sensitivity the recipes I found online were not helpful as they all had one of my allergens. So this is it, if you have an allergy to egg and you ever wondered how an egg actually taste, I am happy I can share this recipe with you. I honestly think this recipe is perfect for those who are wanting to try something new for breakfast that is plant based and delicious!
